  1. ] ham, 1/2# boneless cooked ham*
    1. ] leftovers, PC applewood smoked spiral ham, baked
  2. ] eggs, 6 - extra large
  3. ] green, onion - 2 large
  4. ] mushroom - 4 medium
  5. ] butter - 2 Ta
  6. ] mozzarella - 2 2 oz slices, thin (SUBSTITUTE - monterery jack, swiss, havarti, havarti-jalapeno, ??)
  7. ] 1/4 teaspoon salt*
  8. ] 1/8 teaspoon black pepper

] recipe.instructions

  1. ] cut ham into bit sized cubes
  2. ] cut onion into thin slices 
  3. ] cut mushroom into small peices 
  4. ] saute green onion and mushroom on 1 side of LARGE frying pan in 1 Ta butter
  5. ] put leftover ham cubes on other side of frying pan to warm them
  6. ] crack 6 eggs into center of pan into 1 Ta of melted butter
  7. ] gently scramble eggs
  8. ] as they begin to cook(set), slowly blend in the green onions/mushrooms mix from 1 side and the ham peices from the second side 
  9. ] add seasonings to taste
  10. ] turn off heat, top eggs with cheese slices
  11. ] cover pan and let sit unit cheese has "desired meltation" ( approximately 2 minutes )
